A member of the Umbelliferae family as is caraway, carrots, parsley and parsnips. Our flavorful celery flakes and stalks are harvested, chopped and dehydrated at their peak for maximum freshness and flavor. Because these dehydrated celery flakes are twice as potent as fresh you only need to use about half as much in your recipe.
Grown in California, these celery flakes are great to have in your spice cabinet when you need just a tablespoon or two and your fresh celery is now wilted in the fridge. The flavor of celery flakes brings to mind anise and fennel but milder while the taste is a bit bitter, grassy and hay-like. The aroma has hints of parsley.
We especially love celery flakes in our chicken or vegetable soups, stews and in our turkey stuffing. For stocks and soups you can just toss them in but if you are adding to your casserole or roasts we recommend that you rehydrate them first as there is not enough liquid to do so in the cooking process.
To rehydrate cover in water (using a 1:3 ratio of flakes to water), let stand for about 5 minutes and then drain off excess liquid and use.
If your recipe calls for 1/4 of chopped celery you can substitute 2 tablespoons of celery flakes. 1 ounce of celery flakes is equal to 3/4 cups.
